Blaze Bistro has recently revamped its menu of Canadiana cuisine, helmed by new head chef Shawn Jackson. Chef Jackson comes most recently from Calgary, where he was district head chef of Oliver and Bonacini Hospitality. He’s brought a concise menu of his favourites from running one of Calgary’s largest and top catering operations, where everything is scratch-made with the best local products that are commercially available.

The corned beef in the skillet has been house-brined, and that’s a brown butter hollandaise covering the hash and local Nature's Farm eggs. The salmon is cured then smoked in-house, shaved thin and served beside Winnipeg’s best bagel, the Bagelsmith everything bagel, along with whipped cream cheese.
Have a bowl of local steel-cut oats for a lighter, wintery option. The home fries are made using local red potatoes, while the choice of sausage (including turkey) or bacon (both standard and peameal) are also made in-house. When it's not done in Delta's kitchen, celebrated local companies like Gunn’s Bakery provide the goods, like the brioche for the French toast, which is served with a Saskatoon berry sauce and whipped cream.
If you are looking for a local meeting room for breakfast, Blaze can host up to 18 in the private dining room, with the full menu available. Being located right beside––and directly attached to––the RBC Convention Centre Winnipeg and Canada Life Centre, you can’t beat this central location for convenience too.
For lunch, dinner, or pre-or-post concerts food and drinks, Blaze and its ample lounge also have you covered. Standout items from the new menu include a classic 60/40 brisket/chuck burger, neatly seared on the flat top and loosely packed to juicy results. It’s simply topped with melted Bothwell cheddar, some thick cut house pickles, mayo, shredduce and tomato.
The catch of the day could be anything from local pickerel to grilled mahi-mahi, served on a delicious, light white bean and zucchini cassoulet, with the fish brightened from a verdant gremolata.
To share, try classic mini Yorkshire puddings with shaved beef and horseradish cream topped with crispy shallots, sticky meatballs on yam puree with plantain chips, or crispy calamari. The roasted carrot soup gets a jolt from a foam made with orange juice, while the brined half chicken comes glistening––pressed and stacked with crispy skin and an autumny sauce over a bed of mashed potatoes.
Lunch items include a BLT with house-made bacon that is enhanced with pickling spice, roasted slabs of chicken, arugula, and aioli on house-made focaccia. New desserts too, like a whipped Saskatoon berry cheese cake topped with little dollops of meringue to provide a delightful marshmallowy texture.
